Recipe type: Easy Dinner
Serves: 6-8
Ingredients
  • 1 Tbsp olive oil
  • 1-2 lbs ground beef
  • 1 large onion, halved and sliced (or 1 heaping cup of diced frozen onions)
  • 2 large bell peppers--I use 1 red, 1 green (or 2 heaping cups of frozen bell peppers)
  • 6 large garlic cloves crushed (or 2-3 Tbsp jarred garlic)
  • 1 16 oz package egg noodles
  • 3-4 Tbsp butter or olive oil
  • ¼ cup Parmesan cheese
  • dried parsley
  • garlic salt
Instructions
  1. Start a large pot of salted water on high heat (adding noodles when it comes to a boil).
  2. While waiting for water to boil, drizzle 1 Tbsp of olive oil in a 12-inch saute pan on medium, high heat. Add ground beef. Salt and pepper it while it's browning.
  3. When beef is about halfway browned, add the peppers, onions, and garlic. Be sure to salt and pepper them as well. Continue browning.
  4. About now, the water should be boiling. Add the noodles and cook according to package directions.
  5. Continue stirring beef mixture. I like to cook it until there is visible brown on some of the veggies and beef. It really adds a depth of flavor.
  6. When noodles are done cooking, drain them and put them back into the pot. Don't put the pot back on the hot burner. ;)
  7. Add 3-4 Tbsp butter or olive oil and about ¼ cup Parmesan to the noodles and toss. At this point, you can add some dried parsley and garlic salt, if you like.
  8. Serve the meat mixture on top of the noodles.
  9. Enjoy!
