The Best Green Beans Ever

So fresh and Delicious, the flavor combination in these beans is AMAZING!

Ingredients
  • 2 lbs fresh or frozen green beans (just snap the ends off and leave the beans whole)
  • 8 ounces mushrooms, sliced
  • 1 large yellow onion, sliced in rings
  • ½ cup toasted almonds, sliced or finely chopped
  • ⅓ cup dried cranberries (optional)
  • ¼ cup chicken broth
  • 2 tbsp butter
  • 2 tsp balsamic vinegar
  • Salt
  • pepper
Instructions
  1. Bring large pot of salted water to boil and add green beans when water begins boiling.
  2. Cook green beans for 5-7 minutes. Do not over cook, you want them to be a nice bright green color.
  3. While beans are cooking prepare an ice water bath to put the beans in when you remove them from the boiling water. In a large bowl put ice and cold water, add salt to the water.
  4. Drain beans and immediately put them into the ice water bath to stop them from cooking anymore.
  5. In a large frying pan add 1 tbsp butter and sliced mushrooms, salt and pepper to taste and saute until tender, remove and set aside.
  6. In same pan add 1 tsp butter and saute onion until caramelized, once onion is caramelized, (don't forget to salt and pepper the onion while it is cooking) drizzle 2 tsp balsamic vinegar over onions and ¼ chicken or vegetable broth to de-glaze pan.
  7. Add cooked beans, and mushrooms to the onions and stir until well combined, heat through.
  8. Right before serving top with toasted almonds and dried cranberries.
