Perfectly spiced, cake-like cookies scattered with sweet chocolate chips. An absolute must every Fall. This is the Best Pumpkin Chocolate Chip Cookie recipe out there!

Serves: 5-6 dozen
Ingredients
  • 1 cup canola or vegetable oil
  • 1 cup brown sugar, lightly packed
  • 1 cup granulated sugar
  • 1 15 ounce can pumpkin puree
  • 2 eggs
  • 2 tsp vanilla
  • 4 Cups Flour
  • 1 tbsp +1 tsp baking powder
  • 1 tbsp + ½ tsp ground cinnamon
  • 1½ tsp baking soda
  • 1½ tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 tsp salt
  • ¼ tsp ground cloves
  • 2 cups chocolate chips, I like to use half semi-sweet, half milk chocolate
Instructions
  1. Preheat your oven to 350 degrees. Prepare two cookie sheets with silicone baking mats or parchment paper and set aside.
  2. In your mixer or with a hand mixer, cream together the oil, brown sugar, and granulated sugar for 1 minute.
  3. Add pumpkin, eggs, and vanilla. Mix well.
  4. Add flour, baking powder, baking soda, cinnamon, ginger, nutmeg, salt, and ground cloves. Mix thoroughly. Take time to scrape sides and bottom to ensure thorough mixing.
  5. Add chocolate chips and gently fold or mix them in.
  6. Drop dough onto baking sheets using a cookie scoop. For smaller cookies use a 1½ tbsp scoop. For bigger cookies use a 3 tbsp scoop. Place cookies 2 inches apart on the baking sheets.
  7. Bake at 350 degrees for 11-13 minutes. The bigger cookies may need up to 14 or 15 minutes.
