This pie is made with oatmeal but tastes like pecan pie. Delicious and a great option for people with nut allergies.

Ingredients
  • 2 eggs, beaten
  • ⅔ cup quick oats
  • ⅔ cup granulated sugar
  • ⅔ cup corn syrup
  • ½ cup butter or margarine, softened
  • ¼ tsp salt
  • 1½ tsp vanilla
  • 1 unbaked pie shell
Instructions
  1. In a medium-sized mixing bowl with a whisk or hand mixer, beat the eggs.
  2. Next, add remaining ingredients. Mix well until combined.
  3. Pour mixture into an unbaked pie shell.
  4. Bake at 350° for 40-45 minutes. I put a rim of foil on the edges to keep them from getting too dark.
  5. Serve with vanilla ice cream.
  6. Enjoy!
