Perfectly portioned meatloaf made in a muffin tin. Great for portion control and meal prep. As a family dinner, the kids love the fun shape.

Ingredients
  • 1½ lbs ground beef (or half ground pork and half ground beef)
  • ¾ cup quick oatmeal
  • ¾ cup milk
  • 1 egg
  • ½ cup onion, finely diced (or grate it if your kids will freak out if they see a piece of onion)
  • 1¼ tsp salt
  • ¼ tsp pepper
  • GLAZE
  • ⅓ cup ketchup
  • 2 Tbsp brown sugar
  • 1 Tbsp mustard
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine ground meat, oatmeal, milk, egg, onion, salt and pepper in a medium-sized mixing bowl. Using your hand, incorporate everything into the meat. This only takes 30 seconds or so. You do not want to over-mix.
  3. Fill each cup of a 12-cup muffin tin with the meat mixture to the top and press the mixture down, so it is nice and packed into the cup.
  4. For the glaze, mix ketchup, brown sugar, and mustard in a small bowl. Spoon evenly onto each mini meatloaf.
  5. Bake at 350 degrees for 45-60 minutes minutes.
  6. Let stand for 5 minutes before serving. To serve, carefully remove each mini meatloaf with a fork.
