Frosted Lemon Meltaway Cookies

Little delicious butter cookies that melt in your mouth, with a sweet and tart lemon frosting on top that compliments them perfectly.
Serves: 3 dozen
  • 1 cup butter, softened
  • 1 cup all purpose flour
  • ½ cup powdered sugar
  • ⅔ cup corn starch
  • ¼ cup butter, softened
  • 2 TBSP fresh lemon juice
  • 1 tsp lemon zest
  • 2½ cups powdered sugar
  1. Preheat oven to 325 degrees, prepare baking sheet with cooking spray or parchment paper and set aside.
  2. In a medium sized mixing bowl, cream together the softened butter and flour.
  3. Stir in corn starch and powdered sugar.
  4. Roll dough into small balls and place 1 inch apart on cookie sheet* if using a cookie scoop, see tips above.
  5. Bake cookies at 325 for 12-15 minutes- cookies will be barely browning around the bottom edge.
  6. Let cool before frosting.
  8. In a small mixing bowl cream together the softened butter, lemon juice, lemon zest and powdered sugar.
  9. Mix until fully combined.
  10. If frosting seems too thick, add a teaspoon or two of milk.
  11. Frost the cookies and store in an air-tight container, using wax paper to separate layers.
