Holiday Snowball Cookies {Mexican Wedding Cookies w/out Pecans}

Recipe type: Holiday Cookies
Serves: 24 cookies
- 1 cup salted butter, softened
- ¾ cup powdered sugar, plus more for rolling cookies in
- 1 tsp vanilla
- ½ tsp salt, scant
- 2½ cups all-purpose flour
- In a stand mixer, cream together butter, powdered sugar, and vanilla.
- Using a medium-sized mixing bowl, sift together flour and salt, and then mix into the butter mixture.
- Next, cover and chill for 1-2 hours.
- Roll dough (it will be a little crumbly) into 1" balls and place on a parchment lined cookie sheet.
- Bake in the oven at 400 degrees for 8-10 minutes until set...the very bottom with be a very light brown.
- Remove from cookie sheet and cool on a cooling rack for a few minutes.
- While cookies are still warm, roll in additional powered sugar.
- Let cookies cool again and then roll in powdered sugar again.
- Enjoy!
