Holiday Snowball Cookies {Mexican Wedding Cookies w/out Pecans}

Buttery-shortbread-like cookies that look like snowballs. Perfect for the holidays.

Serves: 24 cookies
Ingredients
  • 1 cup salted butter, softened
  • ¾ cup powdered sugar, plus more for rolling cookies in
  • 1 tsp vanilla
  • ½ tsp salt, scant
  • 2½ cups all-purpose flour
Instructions
  1. In a stand mixer, cream together butter, powdered sugar, and vanilla.
  2. Using a medium-sized mixing bowl, sift together flour and salt, and then mix into the butter mixture.
  3. Next, cover and chill for 1-2 hours.
  4. Roll dough (it will be a little crumbly) into 1" balls and place on a parchment lined cookie sheet.
  5. Bake in the oven at 400 degrees for 8-10 minutes until set...the very bottom with be a very light brown.
  6. Remove from cookie sheet and cool on a cooling rack for a few minutes.
  7. While cookies are still warm, roll in additional powered sugar.
  8. Let cookies cool again and then roll in powdered sugar again.
  9. Enjoy!
