Creamy White Chicken Chili

Ingredients
  • 2 pounds chicken breast, cut into 1-inch pieces
  • 1 large onion, finely chopped
  • 1 tablespoon olive oil
  • 1½ teaspoons garlic powder
  • 2 (4 oz.) cans diced green chilis
  • 2 (15 oz) cans Great Northern Beans, drained and rinsed
  • 1 (14 oz) can chicken broth
  • 1 teaspoon salt
  • 1 teaspoon cumin powder
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 1 cup sour cream
  • ½ cup heavy whipping cream (can sub half and half or evaporated milk if needed)
Instructions
  1. Heat olive oil in a soup pot or enamel-covered cast iron pot. Add the chicken, onion, and garlic powder, and cook until the chicken is no longer pink.
  2. Add green chilis, salt, pepper, cumin, oregano, and cayenne pepper. Then saute for one minute.
  3. Next, add chicken broth and beans. Bring to a boil, stirring occasionally.
  4. Let simmer for 10 minutes.
  5. Remove from heat.
  6. Stir in sour cream and heavy cream.
  7. Serve with chips, cheese, avocado, and any other toppings of your choice.
  8. Enjoy!
