Serves: 6-8
Ingredients
  • 1 lb chicken breast, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1½ tsp sesame seed oil
  • salt and pepper to season chicken (I use ½ tsp salt and ⅛ tsp pepper)
  • 4-5 cups of fresh broccoli florets
  • 1 medium-sized onion, cut into strips or diced
  • 8 ounces of fresh mushrooms, thinly sliced
  • SAUCE:
  • 1 cup chicken broth
  • 3 tbsp soy sauce
  • 3 tbsp brown sugar, lightly packed (or honey)
  • 1½ tbsp cornstarch
  • 2 tsp fresh ginger, grated
  • 2 tsp fresh garlic, crushed
Instructions
  1. In a small or medium-sized bowl, prepare the sauce by whisking together the chicken broth, soy sauce, brown sugar, cornstarch, fresh ginger, and fresh garlic. Set aside.
  2. Heat the olive oil and sesame seed oil in a wok or large skillet for 1 minute before adding the chicken. Sauté the chicken in the oils until lightly browned and mostly cooked through.
  3. Add the broccoli, onions, and mushrooms and continue sautéing for 4-5 minutes.
  4. Give the sauce you set aside a quick whisk and pour it over the broccoli and chicken. Continue cooking for 3-5 more minutes until broccoli and mushrooms are tender and sauce is thickening.
  5. Serve immediately over jasmine rice. YUM!
  6. Enjoy!
