I blame my friend, Tracie, for my obsession with Strawberry Pie. She introduced me to her perfect version of Fresh Strawberry Pie, and before that moment, I didn’t even know I liked it. Now it is on my “Things I Must Eat 10 of Before Strawberry Season Comes and Goes” list.
Tracie has a top-secret family recipe that she uses, so I’ve been experimenting to come up with my own version. I gotta say, this little Fresh Strawberry Pie is a winner.

…..homemade pie crust….ain’t nobody got time for that. Just grab yourself a deep-dish frozen pie crust like I did.
This pie represents everything that is right with the world. I hope it makes you as happy as it makes me.
HOW TO MAKE FRESH STRAWBERRY PIE RECIPE…AMAZING!
- Bake deep-dish frozen pie crust according to package directions. Let the pie crust cool completely.
- Chop one pound of the strawberries into tiny pieces. You can do this by hand or with a food processor.
- Cut the other pound of strawberries in half. If there are some huge ones, cut them in thirds or fourths. Reserve the strawberries for later.
- In a medium saucepan, combine 1 cup sugar, cornstarch, the juice of half a lemon, and the finely chopped strawberries. Cook over medium heat, stirring constantly until thickened.
- Remove from heat.
- In a small/medium mixing bowl, combine softened cream cheese, sour cream, remaining sugar, and vanilla. Using a hand mixer or a whisk, beat the mixture until completely combined and smooth.
- Spread cream cheese mixture into the bottom of the completely cooled pie crust.
- Add the largely chopped strawberries to the thickened strawberry glaze mixture and stir gently until they are all coated.
- Next, pour the strawberry mixture over the cream cheese layer in the pie crust.
- Refrigerate for 2-3 hours or until ready to serve.
- Enjoy!
Tips for making Fresh Strawberry Pie Recipe
- To fit the cream cheese and strawberry layer into the pie shell, use a deep-dish frozen pie crust or make your own deep-dish crust.
- Use a food processor to chop the first pound of strawberries into tiny pieces.
- The 6 ounces of cream cheese is just enough for my preference. If you want to use the whole 8-ounce block of cream cheese, it will still turn out delicious.
- You can make this pie the day before serving. Keep the pie covered and refrigerated until ready to serve.

This is delicious!! I used a graham cracker crust instead-store bought. The filling itself has great flavor but combined with layer of cream cheese mix just takes it over the top. I also used 8 oz cream cheese. Great recipe for any purpose.

Hi Ada, It would probably be better to omit the cheese layer and just go with straight strawberry filling and add some whipped cream on top.

I made this yesterday, followed directions. Pie was flavorful, but Very runny. Not so appetizing looking. Sauce running off pan all over the place. Whole pie turned into mush:(

Hi Liz, So sorry your pie was runny. Depending on elevation the sauce may need a little extra boiling time. It will be sort of thick before you add the fresh berries and should still look slightly thick as you are pouring it into the crust. If it is really watery it needs to boil a little longer.
