I can’t get enough of this Fresh Strawberry Pie Recipe. The tart and sweet strawberries, paired with the amazing creamy n0-bake cheesecake layer is a match made in strawberry heaven. Add a little flaky pie crust in there, and forget about it….half the pie is gone before I know what happened.
I blame my friend Tracy for my obsession with Strawberry Pie. She introduced me to her perfect version of Fresh Strawberry Pie and before that moment, I didn’t even know I liked it. Now it is on my, “things I must eat 10 of before strawberry season comes and goes,” list.
Tracie has a top-secret family recipe that she uses, so I’ve been experimenting to come up with my own version. I gotta say, this little Fresh Strawberry Pie is a winner.
There really aren’t words for how delicious it is. Don’t waste another minute reading this post. Jump up and go get yourself 2 lbs of strawberries so you can get this little sucker made and in your belly! RUN!
…..homemade pie crust….’ain’t nobody got time for that, just grab your self a frozen one like I did.
This pie represents everything that is right with the world. I hope it makes you as happy as it makes me.
- 1 Frozen Pie Crust, baked according to directions (or make your own)
- 2 lbs Fresh Strawberries
- 1 cup sugar, a little less if strawberries are nice and sweet
- 3 tbsp corn starch
- the juice of half a lemon
- 6 ounces softened cream cheese
- ⅔ cup sour cream
- ¼ cup sugar
- 1 tsp vanilla
- Make sure pie crust is cooked according to package directions and cooled completely
- Chop one pound of the strawberries into tiny pieces, You can do this by hand or with a food processor
- Cut the other pound of strawberries in half. If there are some huge ones, cut them in thirds or fourths and reserve for later
- In a medium sauce pan, combine 1 cup sugar, corn starch, the juice of half a lemon and the finely chopped strawberries, Cook over medium heat, stirring constantly until thickened.
- Remove from heat
- In a small/medium mixing bowl combine softened cream cheese, sour cream, remaining sugar and vanilla. Using a hand mixer or a whisk, beat mixture until completely combined and smooth.
- Spread cream cheese mixture into bottom of completely cooled pie crust.
- Add the largely chopped strawberries to the thickened strawberry glaze mixture and stir gently until they are all coated and then pour that mixture over the cream cheese mixture in the pie crust and refrigerate for 2-3 hours or until ready to serve.
I can’t wait for our local strawberries to be ready to pick 🙂 This will be one of the first things I make!

My wife and I made this recipe today and it was AMAZING!!! I bought two frozen nine inch pie shells.and used both of them. We are having family visiting this weekend and will be getting more ingredients for two more. Hats off to you, great job.

This recipe was amazing! I picked fresh strawberries and was looking for something to do with them. I made 2 of these pies, one for the neighbour and we all loved it! I am trying with raspberries today!

yes, just keep it covered in the fridge and don’t cut into until the day you plan to serve it.

Do u know how many carbs are in this? Going to make it a group activity for some kids but 1 is diabetic and is in a carb count.

Cream Cheese comes in 8oz packages. Did you have a reason for using only 6oz.
Yes, I felt like 8 was a little too much, but if you want to use all 8, I’m sure it will still be delicious!
This is delicious!! I used a graham cracker crust instead-store bought. The filling itself has great flavor but combined with layer of cream cheese mix just takes it over the top. I also used 8 oz cream cheese. Great recipe for any purpose.

Hi Ada, It would probably be better to omit the cheese layer and just go with straight strawberry filling and add some whipped cream on top.
Hi made this, it was delicious. Too much for 1 pie so I’m assuming this a 2 pie recipe.
Glad you liked it Dorine. In a shallow pie tin it could make two pies. I usually make it in a deep dish and it just makes one.
I made this yesterday, followed directions. Pie was flavorful, but Very runny. Not so appetizing looking. Sauce running off pan all over the place. Whole pie turned into mush:(
Hi Liz, So sorry your pie was runny. Depending on elevation the sauce may need a little extra boiling time. It will be sort of thick before you add the fresh berries and should still look slightly thick as you are pouring it into the crust. If it is really watery it needs to boil a little longer.
Any idea if this could be made ahead of time and frozen? We just came home from picking 15 lbs of strawberries (we got a little too into it!)!!
Unfortunately, this would not freeze well.

This was a fabulous pie!!! My husband is picky and he had 2 (big) pieces. I’m sorry I didn’t make your wonderful sounding butter crust to go with the amazing filling. I used a Trader Joes crust which if your going to buy one, it’s a good one! Thanks for a great recipe!!!!!
