Hearty Stuffed Pepper Soup

Hearty and delicious soup with everything you love about stuffed peppers but in an easier to eat form. You'll love this comforting soup

Ingredients
- 2 tbsp olive oil
- 1 lb ground beef or ground turkey
- 1 medium onion, diced
- 2 large garlic cloves, crushed
- 1 medium green pepper, diced
- 1 medium red pepper diced
- 1 cup diced or grated carrot
- 2 (15 ounce) cans diced tomatoes
- 2 cups beef broth (I use 2 cups water and 2 beef bullion cubes)
- ½ cup uncooked long grain white rice
- 1 tsp chili powder
- ½ tsp dried basil
- ½ tsp sugar
- ¼ tsp dried oregano
- salt and pepper to taste
- 1 tbsp dried parsley or 2 tbsp fresh parsley (optional)
Instructions
- In a large soup pot heat oil and add ground beef or turkey, cook for 4-5 minutes and then add onion, garlic, green pepper, red pepper and carrot, continue to cook until meat is cooked and veggies are tender (salt and pepper meat and veggies while they are browning..approx 1 tsp salt and ¼ tsp pepper)
- Add diced tomatoes, beef broth, chili powder, basil, sugar and oregano. Bring to a boil
- Add rice and cook, stirring occasionally for 20-25 minutes or until rice is done. (Add more water if necessary)
- Serve with shredded mozzarella or Parmesan cheese if desired
