Toasting coconut in the microwave is one of my favorite baking tips; hence, it is getting an entire post to itself. I used to toast coconut in the oven or on the stovetop, but it’s so much easier and faster this way. I can’t wait for you to try this method and use the coconut for something yummy like the Toasted Coconut Swig Cookie Bars I posted a few days ago or these Amazing Samoa Rice Krispy Treats. Before I get to the “How To,” I gotta know: Am I the only one who has toasted coconut in the oven and felt like the fumes were going to kill me when I opened the door? There is something really strong and pungent about doing it in the oven that drove me to look for a different method. And, I can tell you that toasting coconut in the microwave is 100% the superior and easier way! You’re going to love it!

Step-By-Step Photos and Instructions for How to toast Coconut in the MICROWAVE
- Start with the amount of coconut you need for the recipe and pour it into a glass microwave-safe bowl. I like to use my pyrex bowls. The picture below shows 1 1/2 cups of coconut.
- Next: Place the coconut into the microwave for 1 minute.
- After 1 minute remove and stir well.
- Put back in the microwave for 20-30 seconds. Take out and stir.
- Put back in the microwave for 20-30 seconds. Take out and stir.
- Continue to do this 20- to 30-second increment until the coconut is toasted to your liking.
- Allow to cool before sprinkling onto the desired dessert.
- Store leftover toasted coconut in an airtight bag or container. Make sure it is completely cooled before storing.
- Toasted coconut can stay good in the freezer for up to 2 months in an airtight bag or container.

- Sweetened shredded coconut
- Glass Bowl
- Fork
- Place the desired amount of coconut in the glass bowl. Make sure the bowl is big enough that you will be able to stir the coconut without spilling it over the edge.
- Place the bowl of coconut into the microwave and microwave for 1 minute. Take out and stir well.
- Return the bowl of coconut to the microwave and cook for 20-30 seconds. Take out and stir well.
- Repeat the step of heating for 20-30 seconds and stirring until coconut reaches desired toastiness.
