How to Toast Coconut in the Microwave

A glass bowl full of toasted coconut.Toasting coconut in the microwave is one of my favorite baking tips; hence, it is getting an entire post to itself. I used to toast coconut in the oven or on the stovetop, but it’s so much easier and faster this way. I can’t wait for you to try this method and use the coconut for something yummy like the Toasted Coconut Swig Cookie Bars I posted a few days ago or these Amazing Samoa Rice Krispy Treats. (See pic below.)

Before I get to the “How To,” I gotta know: Am I the only one who has toasted coconut in the oven and felt like the fumes were going to kill me when I opened the door? There is something really strong and pungent about doing it in the oven that drove me to look for a different method. And, I can tell you that toasting coconut in the microwave is 100% the superior and easier way! You’re going to love it!
