I shared a yummy and very practical pie recipe on The Mother Huddle this week. I love that this Oatmeal Pie…Tastes Like Pecan Pie. It’s a great option for those allergic to nuts.

HOW TO MAKE OATMEAL PIE…TASTES LIKE PECAN PIE
- In a medium-sized mixing bowl with a whisk or hand mixer, beat the eggs.
- Next, add remaining ingredients. Mix well until combined.
- Pour mixture into an unbaked pie shell.
- Bake at 350° for 40-45 minutes. I put a rim of foil on the edges to keep them from getting too dark.
- Serve with vanilla ice cream.
- Enjoy!

Q: We only keep Old Fashioned Oats here — if I use, will that change the consistency? [Unsure how to convert Old-fashioned to Quick Oats and we’d not eat if I bought a big container of the Quick variety. Thanks…]

It might change the texture, What I would do is pour some out on a cutting board and use a big knife to go over it until they are the size of quick oats. Or do a few pulses in a food processor if you have one.

Is this a deep dish pie shell? Can I double the recipe and make it deep dish? All the pecan pies I’ve ever made have been deep dish, so that’s what I bought today.
