Pumpkin Chocolate Chip Muffins

 These are the perfect Pumpkin Chocolate Chip Muffins. They’re a staple at our house this time of year! Another pumpkin muffin favorite is these Pumpkin Oat Muffins with Streusel Topping.

HOW TO MAKE Pumpkin Chocolate Chip Muffins

  • Preheat oven to 350°.
  • In a stand mixer or using a hand mixer, cream together sugar, softened butter, and oil.
  • Next, add pumpkin and eggs. Mix until completely combined.
  • In a separate bowl, sift flour and all other dry ingredients together. Slowly add dry mixture to creamed mixture and mix until combined.
  • Add chocolate chips and mix once more.
    Fill muffin tins 2/3 full and bake at 350° for 20 minutes. 
  • Remove from tins and let cool on a cooling rack.

Tips for making Pumpkin Chocolate Chip Muffins
  • You can use white all-purpose flour if you want, but if you use whole wheat flour, you can eat them for breakfast. 🙂
  • Mini semi-sweet chocolate chips are fun to use in place of the regular ones.
  • If you are making mini muffins, reduce the baking time to 11-12 minutes.

Ingredients
  • 2 cup sugar
  • ¼ cup butter, softened
  • ½ cup vegetable or canola oil
  • 1 (15 oz) canned pumpkin
  • 4 eggs
  • 3⅓ cup whole wheat flour
  • 3 tsp cinnamon
  • 1½ tsp ginger
  • ¾ tsp nutmeg
  • ¾ tsp allspice or ground cloves
  • 2 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1½ cups semi-sweet chocolate chips
Instructions
  1. Preheat oven to 350°.

  3. Next, add pumpkin and eggs. Mix until completely combined.

  6. Fill muffin tins ⅔ full and bake at 350° for 20 minutes. If making mini muffins, reduce baking time to 11-12 minutes.
