Slow Cooker Country Chicken and Veggies

 Ranch-seasoned chicken, onions, baby potatoes, and green beans topped with bacon come together for a down-home country flavor in this one-pot dinner recipe. Being reminiscent of something you would cook in a Dutch oven while camping, this Slow Cooker Country Chicken and Veggies recipe is a cousin to my Slow Cooker Hobo Dinner.

A slow cooker filled with baby potatoes, green beans, and cubed bacon pieces.This one-pot dinner is super easy to make, especially if you use whole baby potatoes (no chopping involved). Also, you can substitute the fresh green beans for 2 cans of drained green beans one hour before it’s done. So look no further for a delicious, healthy, and easy dinner. This slow cooker recipe will be a new comfort-food favorite of yours, and one you can feel good about serving your family.

Can I substitute bottled lemon juice for the freshly squeezed?

Yes. Sprinkle 1 tsp of bottled lemon juice over the chicken. If you don’t have any lemon juice on hand, you can use 1 tsp of lemon pepper in its place. If you use lemon pepper seasoning, I recommend omitting the 1/4 tsp ground pepper.

Do you recommend using boneless skinless chicken thighs instead of chicken breasts?

Boneless skinless chicken thighs are a good substitute for the chicken breasts. Use whatever you like the best.

Can I use canned green beans instead of fresh ones?

You can substitute the fresh green beans for 2 cans of drained green beans. However, add them one hour before it’s done. I do not recommend adding them from the beginning because they will turn mushy.

If you only have regular-sized potatoes, cut them into 2-inch cubes. I do not recommend cooking them whole.

Can I leave the green beans out?

Absolutely. If you don’t like green beans, you can replace them with carrots, if you want, and the dinner will still taste good.

Can I use real bacon bits in place of the raw bacon?

Yes, you can. The flavor will be different, but it will still turn out good.

Ingredients
  • 2 lbs chicken breast, cut into 2-inch cubes
  • Juice of half a lemon
  • 1 tsp garlic salt
  • ¼ tsp ground black pepper
  • 1 large onion, sliced into rings
  • 1 Ranch seasoning packet or 3 tbsp
  • 2-3 lbs baby potatoes
  • 1 lb fresh green beans
  • ¼ cup butter, sliced
  • 1 cup raw diced bacon pieces (6-8 ounces raw bacon, chopped)
Instructions
  1. Place the chicken cubes in the slow cooker and squeeze the juice of half a lemon over the chicken.
  2. Next, sprinkle the garlic salt and ground black pepper on the chicken pieces.
  3. Add the sliced onions and the baby potatoes. Then sprinkle ½ of the Ranch seasoning packet over the onions and potatoes.
  4. Layer the green beans over the potatoes, add the slices of butter on top, and sprinkle the rest of the Ranch seasoning packet over the green bean layer.
  5. Lastly, sprinkle the raw bacon pieces on top.
  6. Place the lid on the slow cooker and cook for 6-8 hours on low or 4 hours on high.

    My family loved the beans with the bacon the most from this meal. How would I go about cooking just the beans with the bacon?

      Hi, Jenni. Follow instructions 1-3 for The Best Green Beans Ever to cook the beans. Then cook the bacon pieces in a large frying pan. When the bacon is done cooking, add the green beans and toss them with the bacon. Season with salt and pepper to taste and serve immediately. If there is a large amount of bacon grease, drain the grease, leaving 1-2 tablespoons to toss with the green beans.
