It’s been a busy few weeks and I’ve had to put the Menu Planning on the back burner to take care of everything else, but I’m happy to be back at it today. I really love creating menus. I hope you’re all having a nice February!
Start the week off with some fast and easy sloppy joes and baked carrot fries on Monday. Carrots are only $.59 cents per 2lb bag so I’m suggesting putting them in just about everything this week. Grate some into the sloppy joe meat and serve them as fries for a side. Or, serve carrot sticks with ranch.
Tuesday take advantage of eggs only being $.59 a dozen and make crust-less egg quiche and french toast bake for a yummy breakfast for dinner night. Also, multi colored mini peppers and mushrooms are on sale and will go great in the crust-less quiche.
Wednesday I want you to make one of the most underrated recipes on the blog. It’s really yummy but isn’t photogenic so it has never gotten the fair chance it deserves. It’s time to give it a try. Serve it over rice, and if you want you can make or buy Naan bread to eat with it.
Thursday is a super easy chop toss and bake recipe. Chicken thighs are only $.69 cents this week so use them in this recipe, if you don’t want to use thighs use Kielbasa. This is one of our go to recipes for busy nights. Make sure to throw in lots of carrots, peppers, sweet potatoes, onions and mushrooms that are all on sale this week.
Friday is an easy skillet meal. Instead of the green peppers it calls for you can use the multi-colored ones you got on sale this week along with the carrots and mushrooms it calls for. Bake up some easy Artisan Bread to serve with it and save the second loaf to go with your soup tomorrow or for another meal next week. You can keep this bread in an airtight freezer bag for up to 6 weeks in the freezer.
Saturday, use those sweet potatoes that are on sale for $.99 per 3lb bag this week and make some delicious Sweet Potato Black Bean Soup. Serve it with the extra loaf of Artisan Bread you made on Friday or with chips, cheese and sour cream.
Sunday we’re going back to those super affordable chicken thighs and making one of my favorites. Sticky Teriyaki Baked Chicken Thighs. Serve them with rice and your favorite steamed veggies. I really like green beans or broccoli with this meal, but another option this week is to use those carrots you got on sale and make some Maple Balsamic Roasted Carrots to serve along side.
I have some yummy choices for your sweet tooth at the end of the post as well as some great snack ideas for the kids. Also remember that eggs are only $.59 a dozen so this is a great week to make egg salad sandwiches for lunch. Eggs can stay good in the fridge for weeks so stocking up if you have the space is a good idea at this price.
