We had soup for dinner tonight.
I just realized we had soup last Thursday, and the Thursday before that too. Ha! Apparently we like soup.
Tonight I made an easy favorite, Kale and Sausage Soup with Cannellini Beans, except I didn’t use sausage tonight. I had some in the freezer, but I got started with dinner late and was to lazy to run down and get it out of the freezer in the basement. Yes, I’m that lazy.
The soup is delicious with or without the sausage. It’s one of those simple recipes that explodes with flavor. Yes, explodes.
I made a super quick loaf of Artisan Bread to go with our soup, I halved this recipe and had it rise in the oven so it would be done jiffy quick. Start to finish in under and hour. Yes, jiffy quick.
I wish I could get out of the habit of putting off dinner preparations until the kids are home form school. Why or why do I keep shooting myself in the foot like this?
Trying to help them with homework, entertain Charlotte and Trever and cook dinner is a balancing act that almost always ends with me loosing my patience with someone. ……but today I didn’t, I’m so proud. Yes, so proud.
I think it had more to do with the fact that I let Charlotte watch a show on the iPad, which brings her pure happiness….
….Trever had just woken up from a good nap and was happy to jump in the jump-a-roo……
……Conner did his homework super fast, so he could watch a show on Netflix (he picked America’s Funniest Home Videos, and was cracking up, I wish I had a recording of his laugh, it was hilarious)…..
…..and Thatcher….well, he sat in the office “supposedly” doing homework that I had explained to him and left him to work on. It took him FOREVER…..you can see his paper is still blank in this picture…he had been “working” on it for at least 20 minutes at this point. The miracle of this, was that he wasn’t whining and begging me to help him like he usually does. After I got the soup put together and the bread dough made, I went in and helped him finish. I am so nice some times.
I wish I could say I went the rest of the evening without losing my patience with anyone……
Unfortunately, my friend Charlotte was having an extra dramatic day and after the hundred and fourteenth time she cried or had a fit about someone looking at her the wrong way tonight, my angry voice came out and I sent her to timeout. Seriously how do people with more then one girl do it…..so much emotion and drama. SO MUCH!
