Zucchini is one of my favorite vegetables….or is it a fruit? Whatever it is, when it comes into season, I get pretty excited. This simple Zucchini Cheese Bake side dish (we are talking 2 ingredients) is one of my all-time favorite ways to prepare zucchini. Another favorite and delicious zucchini side dish of mine is this Sauteed Zucchini and Yellow Squash with Garlic and Parmesan.
My mother-in-law introduced me to this Zucchini Cheese Bake about ten years ago. I loved it and had never eaten zucchini that way before. It has been my go-to zucchini side dish ever since. It’s one of those things you can throw together in minutes and then forget about while it bakes in the oven.

This is totally worth turning your oven on…even if it is the middle of the summer. I like to make it when we have meatloaf and baked potatoes since the oven is already on anyway.

HOW TO MAKE ZUCCHINI CHEESE BAKE
- Preheat oven to 350 degrees.
- Lightly grease a 9×13 baking dish.
- Place one-third of the zucchini slices evenly in the bottom of the dish and sprinkle on top 1/2 cup of cheese.
- Repeat with another layer of one-third of the zucchini and 1/2 cup of cheese.
- Place remaining zucchini slices on top, cover with foil, and bake for 35-40 minutes or until zucchini is tender.
- Remove foil and top with remaining cheese and return to oven for 10 minutes or until cheese is melted.
- Enjoy!
Tips for making Zucchini Cheese Bake
- Yellow summer squash can be substituted in place of the zucchini or you can do a combination of both.
- I like to use mild cheddar or Colby Jack cheese in this recipe.
- The cooking time may vary depending on how thick or thin you slice your zucchini/squash or how deep you layer it.
- To brown the cheese, place the dish under the broiler for a minute or two.
- 7-9 cups zucchini, sliced (approx 3 to 4 zucchinis)
- 2-3 cups shredded cheese of your choice
- salt and pepper
