Copycat Cafe Rio Shredded Chicken

A recipe you can throw together and forget about. The flavorful meat is perfect for everything from burritos and salads to quinoa bowls and enchiladas. A great way to prep protein for the week, too.

Ingredients
  • 2 lbs boneless skinless chicken breasts
  • 1 tbsp of Italian Seasoning Packet or my homemade version
  • 2 tbsp apple cider vinegar (can also use white vinegar)
  • 2 tbsp olive oil or canola oil
  • 1 tsp lemon juice, fresh or bottled (can use lime if you don't have lemon)
  • 1 packet dry ranch seasoning mix or 3 tbsp if you have a large container
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • ¾ cup water
  • pinch of red pepper flakes (optional)
Instructions
  1. Place the chicken into your slow cooker. You can use a slow cooker liner, if desired.
  2. In a small mixing bowl, combine all the other ingredients except the water and whisk together.
  3. Add the water and whisk again.
  4. Next, pour the mixture over the chicken and put the lid on the slow cooker.
  5. Cook on high for 4 hours or low for 6 hours.
  6. When the chicken is done, it will easily shred with a fork.
  7. Use the meat for burritos, salads, tacos, quinoa bowls, nachos, or anything else you desire.
  8. Enjoy!
