Texas Caviar
Author: Slightly adapted from a recipe I got from my sister years ago

Serves: 8 cups
- 2 (15 oz) cans black beans, drained and rinsed
- 5-6 Roma tomatoes (approx. 2-3 cups chopped)
- 1 medium red onion, finely chopped (approx. 1 cup)
- 1 (12 oz) bag of sweet corn (See Tips for brand and type I recommend.)
- 1 orange bell pepper, finely chopped
- 1 jalapeno, seeded and finely chopped
- 1 cup Italian Salad Dressing
- Bag of your favorite corn chips
- In a large mixing bowl, combine all ingredients and mix well.
- Cover with a tight-fitting lid or plastic wrap and refrigerate at least 1 hour before serving.
- Serve with your favorite corn chips.
- Store leftovers in an air-tight container in your fridge for up to 1 week.
