What’s for Dinner {April 10, 2014}

Tracie's Strawberry Pie

 I’m late getting this post up for a couple reasons. The main one being I can’t stop eating this pie my friend brought by tonight. LOVE HER! She knows it’s my favorite and made it just for me! She’s made this pie for me before and my husband knows better then to even ask if he can have a piece and the children, HA! Not a chance. I savor every bite by myself, because I am selfish like that when it comes to my very favorite things.

What's for dinner April 10, 2014As far as dinner tonight, I was planning on making a quick lasagna with leftover Amazing Spaghetti Sauce from last night. Unfortunately, I didn’t get it prepped, like I had planned to, before I had to take Conner to a doctor appointment. By the time we got home we only had about an hour and a half before we needed to leave to go look at a house we might rent/house sit. Dinner turned into plan B…..

I hurried and whipped up some pancakes and fried eggs and remembered I had a few sausage links in the freezer. I also put out the leftover Oriental Chicken Salad I had made earlier for me and a friend who came over to watch Charlotte for me so I could video Thatcher’s Speech Therapy Session.

What's for Dinner {april 10, 2014}That salad is best served within 24 hours of adding the dressing and it’s one of my husbands favorite things I make, so I figured he might enjoy eating it for dinner more then pancakes and eggs. It did make for a strange combination of food on the table.

SmoothieI also hurried and made a quick smoothie to get a few fruits into the kids.

It’s been a few months since I sat in on one of Thatcher’s Speech Therapy Sessions. I used to go to every one before he started kindergarten, but now they are during school time which makes it more complicated. I went to one the second month of school and because he wasn’t used to me being there anymore, he was too excited to see me and didn’t work very hard. After that I decided it was probably better if I didn’t go anymore.

Thatcher and Mrs. Cheryl april 10 2014I really wanted to get some video of his progress though, because he is killing it with the whole talking more thing, and decided to risk it today. I CAN’T BELIEVE HOW AWESOME HE WAS! Even with me there and even with being videoed he was so on task and worked so hard for the entire session. It was AWESOME!

Thatcher and Mrs. CherylHis Speech Therapist, Mrs. Cheryl, is amazing. We love her so much. She is so good with Thatcher and so patient. She keeps up to speed with the best ways to help him as well as helps me know what I can do at home. I can’t imagine where we would be in this process without her.

As for the doctor appointment Conner had today, it was with the Ear Nose and Throat Doctor, to see if he needs his tonsils out. Sure does….they are being so kind and trying to schedule it for as soon as possible so it can be ancient history before we welcome our new brother in about 6 1/2 -7 weeks.

Looks like it will be the Wednesday or Thursday after Easter. Not sure if I am ready for this. Conner is quite possibly the least pain tolerant person alive. We’ve done our best to warn him about the pain and prepare him but this could be ugly, very ugly.

    Tonsils…yuck! And way to go Thatcher, so proud of you! That pie looked yummy, what a sweet and thoughtful friend. And other than that I don’t like this post very much….and you know why. 😉

    Just remembered the fruit smoothie trick yesterday!- When dinner is a little skimpy, or lacking nutrients I through one together, so glad it’s getting warm enough to do this again!
