 Jen’s Tomatillo Pico de Gallo

Jen’s Pico de Gallo recipe is made with crunchy, tart, and citrusy tomatillos, along with Roma tomatoes, onion, jalapeno, cilantro, and garlic salt. The tomatillos’ flavor replaces the lime juice found in a regular Pico de Gallo Recipe. This uniquely delicious pico de gallo tastes like it is from a really good restaurant. It perfectly pairs with tortilla chips and all your Mexican favorites.

I like pico de gallo, and I have been making it forever. However, using squeezed lime juice does not always deliver the same consistent flavor, but this recipe does. Every time I make this tomatillo pico de gallo, it tastes the same. It’s soooo good!

If my grocery store doesn’t sell tomatillos, where can I buy them?

You can find them at Latin market specialty stores.

How do I choose ripe tomatillos?

A ripe tomatillo will be bright green. When buying them, choose ones that are firm and have no brown or soft spots. If they still have the papery husk on them, choose ones that are fully filled and starting to burst open.

Does this recipe call for lime juice?

No. The tomatillos’ flavor replaces the lime juice found in a regular Pico de Gallo Recipe.

Lawry’s Garlic Salt is coarse-ground garlic with parsley. I recommend using Lawry’s Garlic Salt or a different brand of coarse-ground garlic with parsley for the best flavor. If you do not have that on hand, garlic salt will work, and the pico de gallo will still taste good.

Is this pico de gallo spicy?

No. If you like a spicy pico de gallo, keep the seeds of the jalapeno when you chop it.

How long will this pico de gallo last?

It will last up to 3 to 4 days in an airtight container stored in the refrigerator.

This uniquely delicious pico de gallo tastes like it is from a really good restaurant. It perfectly pairs with tortilla chips and all your Mexican favorites.

Recipe type: Condiment/Salsa
Serves: 4 cups
Ingredients
  • 3 regular-sized tomatillos, diced (Make sure to remove the husk and give them a good wash.)
  • 6 Roma tomatoes, diced
  • 1 white onion, finely chopped (a heaping cup)
  • 1 jalapeño, seeded and finely chopped
  • ½ cup chopped cilantro
  • 1 tsp Lawry's garlic salt (add more as needed to taste)
Instructions
  1. In a medium-sized mixing bowl, combine the tomatillos, tomatoes, onion, jalapeño, cilantro, and Lawry's garlic salt. Mix until well combined.
  2. Add more garlic salt as needed to taste.
  3. Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
  4. Enjoy!
