Just in case anyone is under the impression that a food blogger eats and serves beautiful meals every night, I thought I would clear that up.
In the spirit of keeping things very real around here, I’m posting a snap shot of our “Real Life Dinner” ever Thursday along with a blip about what we ate and what we did that day. No matter what we are eating, where we are or who we are with, I will snap a picture every Thursday to share with you.
So do you like my beautiful dining room table? Our table is in the middle of being refinished so we are eating fancy style on the fold out. We had a very basic version of Chicken chili Casserole that my husband threw together in less than 20 minutes.
It was basically rice on the bottom, leftover chicken chili dumped on top and shredded cheese and olives sprinkled over the chili. He through it in the oven to warm through, heated up some frozen corn and sliced up some garden tomatoes (they didn’t make it into the picture) and called it good. This is the kind of meal I refer to as a Leftover Makeover.
It was tasty. There was only a small corner left in the 9×13 pan once we were through.
