When I was a little girl, someone had a party with cupcakes that were in an ice cream cone. I really liked them, so I asked my mom if we could make them, and I have been making them ever since. It’s been a while since I made these cupcakes and thought I had made them for all my kids. Then I realized I had not made them for Trever. (The older kids got all my energy and creativity.) For Trever’s birthday, my husband was out of town, and I had a lot on my plate. I didn’t want to make a special cake that would take a lot of time. Then I remembered these ice cream cone cupcakes and made them for Trever’s birthday.
Kids like store-bought frosting, but I recommend homemade frosting if you are going to eat one because they taste better. The frosting from this sugar cookie recipe has two frosting options–cream cheese and buttercream. Either one will taste yummy on these cupcakes. A favorite flavor combination is a Funfetti cake with rainbow chip frosting. Another good one is a yellow cake with chocolate buttercream frosting.

Tips for How to Make Easy Cupcake Cones
- A typical cake mix size makes 18-20 cupcakes, depending upon the size of the cone.
- Fill the ice cream cones with batter until about 1/2 inch from the top, leaving room for the batter to expand.
- Bake the cupcakes by starting 4-5 minutes less than what the box says for a cupcake.
- I use a baking sheet to bake the cupcakes. You can bake them standing in a muffin tin, but I find it makes them more wobbly when putting them in and taking them out of the oven.
- If one of the cones with batter tips over, the batter is usually thick enough that it won’t spill out if you hurry and stand it back up.
