 Chessmen Cookie Banana Pudding Recipe

A delicious no-bake dessert with layers of crunchy butter cookies, fresh bananas, and a smooth and creamy banana pudding. This super-rich Banana Pudding with Chessmen Cookies is like a bougie banana cream pie, and it is on par with the world-famous Magnolia Bakery Banana Pudding.

The creamy, thick texture makes it easy to slice each Chessman portion, and the cookies hold their shape instead of looking like they were scooped out.

I took this dessert to a book club and two of my neighbors. Everyone said it was so good, and people were even messaging me about how good it tasted. There are a few extra steps I don’t usually like to do, but it’s totally worth it. This banana pudding is sure to be a hit for whoever you serve it to.

How many cookies do I need?

For a regular 9×13 baking dish, you will need at least 40 Chessmen cookies–20 for the bottom layer and 20 for the top layer. Depending upon the shape of the 9×13 dish, you will use more cookies.

Can I use a different type of cookie?

Yes. Shortbread cookies, vanilla wafers, and sugar cookies are all good options. Also, instead of using whole cookies for the last layer, you can crush them and evenly sprinkle them over the top.

How ripe should the bananas be?

You want bananas that are firm and yellow and just beginning to turn ripe. They can have a little green on the peel, but steer clear of bananas with a lot of dark brown spots on them.

Can I use a different flavor for the instant pudding?

Yes. Vanilla, white chocolate, and cream cheese are good flavors.

How far in advance can I make it?

I recommend letting it chill for 4-6 hours or overnight.

A delicious no-bake dessert with layers of crunchy butter cookies, fresh bananas, and a smooth and creamy banana pudding. It is simple and easy to make, yet fancy and gorgeous.

Ingredients
  • 1 (5.1-ounce) instant banana pudding mix
  • 1 (12-ounce) can of evaporated milk, chilled
  • 1 (14-ounce) can of sweetened condensed milk
  • 1 (8-ounce) package of cream cheese, softened
  • 1 tsp vanilla extract
  • ½ cup powdered sugar
  • 1½ cups heavy whipping cream
  • 2 (7.25-ounce) Pepperidge Farm Chessmen Butter Cookies
  • 6 large bananas
Instructions
  1. In a medium-sized mixing bowl with a handheld mixer, cream together the instant banana pudding and the chilled evaporated milk until it has thickened (approximately 2 minutes).
  2. Add the sweetened condensed milk and mix until well combined. Cover with plastic wrap and refrigerate.
  3. Next, in a medium-sized mixing bowl, add the cream cheese. With a handheld mixer, mix the cream cheese until it is smooth.
  4. Add the powdered sugar and vanilla extract and mix until thoroughly smooth.
  5. Slowly pour in the heavy cream while the handheld mixer is on slow speed. Once the mixture is combined, continue to beat on high speed until stiff peaks form.
  6. With a rubber spatula, gently fold in the pudding mixture into the cream cheese mixture until combined, being careful not to overmix. Set aside.
  7. Next, in a 9x13 baking dish, evenly layer the Chessmen cookies on the bottom of the dish.
  8. Slice the bananas. Place a single layer of bananas on top of the cookies.
  9. Evenly spread half of the pudding-cream-cheese mixture on top of the bananas.
  10. Next, add another single layer of bananas, and evenly spread the rest of the pudding-cream-cheese mixture on top.
  11. Evenly place the Chessmen cookies over the top.
  12. Place in the refrigerator and chill for at least 4 hours before serving or overnight.
  13. Store leftovers in the refrigerator for up to 2-3 days.
