The Perfect Sugar Cookie Cake Recipe
If there’s anything I’m an expert at, it is making something super delicious and easy to make. This Perfect Sugar Cookie Cake fits that bill. It’s dense enough to eat like Sugar Cookie Bars without a plate and fork, making it easy to serve at a party. On the other hand, you can serve individual slices on themed plates for a simple and fun display for any occasion.
Some argue you need to sift the flour, but my expertise is knowing that it is not going to make a big difference in most recipes. I’m never going to tell you to measure something in grams. The amount of difference that level makes in most recipes is not worth the time for a busy mom and family.
Both the cookie cake and frosting are made with cream cheese and almond extract, which gives it a unique flavor that makes it moreish. Soooo good! My birthday is next month, and it is definitely what I want for my birthday cake this year.
If you’re looking for a fun and non-traditional option for a birthday dessert, this is it. Look no further!

Tips for Making the Perfect Sugar Cookie Cake
- There’s no need to sift the flour. Some argue you need to, but my expertise is knowing that it is not going to make that big of a difference.
- Use full-fat cream cheese for the best results. Non-fat cream cheese doesn’t work as well for baking, but low-fat is okay.
- Make sure the butter and cream cheese are softened before mixing the batter and frosting.
- How to soften cream cheese quickly:
- Heat a bowl of water in the microwave, pour the water out, and place the bowl over the cream cheese. It should soften in about 5 minutes.
- Remove the cream cheese from the package, cut it into equal-sized cubes, cover it with plastic wrap, and allow it to sit at room temperature for 30 minutes.
- Place the unwrapped block of cream cheese on a microwave-safe plate, microwave on high at 10-second intervals until the desired softness is reached. Make sure to check it after each interval so it does not melt.
Baker’s Tools for Sugar Cookie Cakes:
- Quarter Sheet Pan (13x9x1)
- Stand Mixer
- Almond Extract
- Measuring Cups
- Magnetic Measuring Spoons
- Cooling Rack

- Cookie Cake:
- 1 cup butter, softened
- 1 (8-ounce) block of cream cheese, softened
- 1½ cups granulated sugar
- 1 egg
- ½ tsp almond extract
- 1 tsp vanilla extract
- 2½ cups all-purpose flour
- ½ tsp baking soda
- 1 tsp baking powder
- Frosting:
- ¼ cup butter, softened
- 2 ounces block cream cheese, softened
- 2 cups powdered sugar
- ½ tsp vanilla extract
- A few drops of almond extract
- 1 tbsp milk
- Sprinkles for topping (optional)
- Cookie Cake:
- Preheat the oven to 350 degrees.
- Spray a quarter baking sheet (13x9x1)with cooking spray and set aside.
- Next, using a stand mixer or handheld mixer, cream the softened butter and softened cream cheese together until combined.
- Add the sugar and mix until well combined.
- Next, add the egg, almond extract, and vanilla extract, and mix until well combined.
- Add the flour, baking soda, and baking powder. Mix for approximately 1 minute or until completely combined.
- Spread the dough evenly onto the prepared cookie sheet. I like to use a sandwich baggie over my hand to evenly press it down. Spray the sandwich baggie with cooking spray, if necessary. (See step-by-step photos.)
- Bake at 350 degrees for 30-35 minutes, or until a toothpick inserted in the middle comes out clean and the center is set. The top will be golden brown.
- Let cool completely.
- Frosting:
- Mix butter and cream cheese with a stand mixer or handheld mixer until combined.
- Next, mix powdered sugar, vanilla extract, a few drops of almond extract, and milk until nice and smooth.
- Frost the cookie cake when it is completely cooled. I like to use the back of a spoon to frost it. (See step-by-step photos.)
- Enjoy!
