If you are new here, read my first What’s for Dinner post to get filled in on what the heck’s going on around here. If you have been to this rodeo before, let’s get down to business.
We had a super quick 15 minute dinner tonight. Both boys had practice at 6:00. Conner had basketball practice and Thatcher had indoor soccer practice.
I tried to have dinner ready right when dad got through the door, because we needed to scarf it down and head out in different directions to make it to the practices on time.
I love this quick recipe for spaghetti sauce from my friend Melissa. I make it often on nights where I have nothing planned or need something on the table in minutes.
I will have to officially post it sometime, but for now, this will have to do.
Melissa’s Sauce
1 29 oz. can petite diced tomatoes
4-5 cloves or garlic finely chopped
2 tbsp olive oil
2 tbsp brown sugar
1 tsp salt
basil to taste (approx 1/2 tsp or so)
Saute the garlic in the olive oil and stir in remaining ingredients. Simmer while you wait for your noodles to cook.
I steamed some veggies and cut up half a loaf of Artisian bread we had left over from soup Tuesday night and called it good.
There was one, really weird, thing that happened today….
Charlotte and I were out doing a little last minute Christmas shopping. Since we were already out we decided to grab a little lunch before heading home. We went to Qdoba. It was pretty packed and we were lucky to find a seat.
The young man sitting across from me looked familiar and I kept trying to place where I had seen him before. Half way through my Mexican Gumbo I realized that he is the person who rear-ended me last April and totaled the vehicle I was driving. AWKWARD! I never thought I would see him again.
That whole car accident experience was pretty much something out of the twilight zone. I’ll have to tell you about it sometime…for now, let me just give you a taste….the young man’s father showed up and kept asking if he could pray over me and then a seven year old little girl with a mullet jumped out of the tow truck and started hooking up our vehicles to get them on the tow truck…that is only the beginning…..
