If you’re new here, read my first What’s for Dinner post to get filled in on what’s going on. If you’ve been to this rodeo before, let’s get to business.
Dinner tonight was a bit rough on the children.
Oops!! I thought adding a few seeds from the Jalapeno into the chili would give it a nice little spicy undertone. Well, apparently that jalapeno was on steroids. I only added about 10 or 15 seeds and holy smokes, it was crazy hot!!!!
Sim thought it was great. The rest of us ended up adding heaps of sour cream to try and put the fire out. (This is the picture I took before I realized I was going to need half a cup of sour cream to be able to eat it.)
On top of it being super spicy, sweet potato black bean chili is probably Conner’s least favorite thing I make, so when I told him he was going to have to eat at least one peach slice, he was pretty sure he was going to die.
You can actually see the terror in his eyes. Don’t worry, he lived through it.
Trever thought dinner was great.
That peach that almost killed Conner came from this lovely box of peaches that I was planning on canning, but they are so delicious I am not sure canning is going to happen before we gobble them all up, and by we, I mean everyone but Conner.
I may have gotten a little over zealous in my dreams of canning this year, I picked up these three boxes of tomatoes yesterday to prep and get ready to make salsa in a few days.
A friend of mine is coming down from New Jersey, she is actually my adopted mom, and we are going to make her famous salsa on Monday. Today I was planning to blanch, peel and chop the tomatoes and get them in the freezer to save us time on Monday, but that didn’t happen…..I guess there’s still tonight after the kids go to bed though. We’ll see……
The kids had school off today and it was a very wet and rainy day so they spent a lot of time in the house and playing over at the neighbors. Charlotte cried and cried that I wouldn’t let her go with Conner and Thatcher to the neighbors house. I hate to break it to you Charlotte, but you are two.
Dad became the hero of the day when he came home and offered to take the older three swimming after dinner. That’s where they are now. And Trever and I are thinking about getting started on all those tomatoes……..
Keep it Real!!!

Sweet potato and black bean chili! I forgot all about that fabulous (vegetarian!) recipe of yours. I’ll have to add it back into my rotation!
