
BBQ Chicken Salad with Cilantro Lime Dressing

I like to use Sweet Baby Ray’s barbecue sauce on the chicken, but this recipe is versatile because you can use your favorite barbecue sauce and your preferred method to grill chicken. You can make as much or as little as you want, tailoring it to feed a crowd, serving it as a weeknight dinner, or assembling the ingredients ahead of time for meal prepping.
This salad was first introduced to me by a lady at church whom I met in my college days. She made it for me, and wow! It was soooo good. How to Make BBQ Chicken Salad with Cilantro Lime Vinaigrette
- Make the vinaigrette a few hours or the night before if possible, so the ingredients have time to meld together.
- In a blender, add the olive oil, lime juice, balsamic vinegar, honey, ground cumin, and salt. Blend until completely combined.
Store leftovers in a sealed jar in the refrigerator for up to two weeks.- For serving the salad, place the sliced bbq chicken on a plate, the chopped romaine lettuce in a bowl, the drained black beans and corn in separate bowls, the Parmesan cheese in a small bowl, and the jar of Cilantro Lime Vinaigrette next to the other ingredients.

- Assemble the salad by placing chopped romaine lettuce on the bottom of the plate. Top it with a scoop of corn and black beans. Put the sliced bbq chicken on top and drizzle it with Cilantro Lime Vinaigrette and a sprinkle of Parmesan cheese.
