Faster then making regular cowboy cookies, these Cowboy Cookie Bars are so easy to make, y’all or gonna love them. Yeehaw!!!
I saw some mouthwatering pictures on Pinterest of these Cowboy Cookies from Averie Cooks. I knew I had to try them, but was feeling lazy so decided to turn them into cookie bars. They came out fantastic. Right out of the oven they were a little crumbly when warm, but once they had time to cool they held together perfectly and made a delicious handheld snack for the kids when they got home from school.
They were a hit and have been a constant request ever since.
Give these Cowboy Cookie Bars a try next time you need a treat for a potluck or get together.
- ½ cup softened butter
- ½ cup packed light brown sugar
- ¼ cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup old fashioned oats
- 1 tsp baking powder
- ½ tsp course sea salt
- 1 cup chocolate chips
- ½ cup sweetened shredded coconut
- 1 cup cereal, I use crushed corn chex, crushed corn flakes, or rice crispies.
- ½ cup chopped nuts, walnuts or pecans are my favorite, but almonds or peanuts would work too.
- Preheat oven to 350 degrees. Spray a glass 9x13 pan with cooking spray and set aside.
- In a medium sized bowl or in your stand mixer, combine softened butter, light brown sugar, granulated sugar, egg and vanilla. Beat on medium speed for 2-3 minutes or until creamed.
- Add flour, oats, baking powder and sea salt. Mix for another minute or two until well combined, scrap sides down half way thru mixing.
- Add chocolate chips, shredded coconut, crushed cereal and chopped nuts. Mix until just blended.
- Scoop cookie mixture out into prepared 9x13 pan, and evenly spread over pan. (I use a plastic baggie over my hand and push it down evenly because the dough is thick and can be hard to spread with a spoon.
- Once dough is evenly spread into pan, bake it at 350 degrees for 12-16 minutes or until edges are beginning to brown and a toothpick inserted in the center comes out clean.
- Let cool and cut into squares.
